What’s that doughnut-like thing doing on your South Indian breakfast thali (platter)? While a vada won’t cure your sugar cravings, it will satiate your desire for something deep fried, hot and crispy.

Made from a batter of black lentils, gently spiced with peppercorns, curry leaves, cumin, chilli and onion, this crunchy fritter tastes best when smeared generously with coconut chutney.

Is it a pancake? Is it a pizza? No, it’s an uttapam . A batter of fermented rice and lentils is ladled on to a griddle. Chopped tomato, onion, chillies, carrot, coconut and other toppings are then sprinkled on. The result is a fluffy, porous, delicious uttapam , softer than a dosa , and tastes great with chutneys or without.

There’s nothing quite like a steaming tumbler of South Indian filter coffee to kick start your morning. Coffee connoisseurs will concede that nowhere else in India does kaapi like the south.

Beans from southern Indian coffee-growing regions such as the Nilgiris, Malabar and the hills of Karnataka are roasted, ground and sometimes blended with chicory.

The coffee is then brewed in a steel filter, mixed with hot milk and poured vigorously between two tumblers from a great height to create a frothy strong brew, served in a stainless steel glass.

The ubiquitous biryani is found in different forms all over India, changing in flavour and preparation style according to regional influences.

Biryani is essentially a dish of rice cooked with meat, veggies and spices such as turmeric, cardamom, bay leaves, cinnamon, cloves, and pepper; sometimes garnished with cashews, raisins and caramelized onions. It can be vegetarian or have meats such as chicken, mutton or beef.

While there is no single South Indian-style biryani , you’ll find different varieties such as Hyderabadi dum biryani , Kerala-style Malabar or Thalassery biryani , the coastal Karnataka variant of Bhatkali biryani , Tamil Nadu’s Dinidgul biryani and so on.

A milky, sugary rice pudding, payasam is a dessert that’s served across South India during festivals and major events. Rice or vermicelli (depending on the type of payasam ) is added to boiled, sweetened milk and sometimes flavoured with cashews, almonds and cardamom. Found in many varieties and are similar to crepes, they’re made from fermented batter of rice and black gram. Thin and crispy dosas are  served hot with Sambar, a light spicy soup that’s perfect for dipping, and an assortment of chutneys(sauces), condiments made from coconut, tomato, mint etc. Masala Dosa is the popular choice which is stuffed with fried onion and potato.

Locals call it ‘God’s own country’ for a reason. With a year-round tropical climate, awe-inspiring views and fresher than fresh produce, it’s not hard to see why. In the state of Kerala you can eat like a deity every single day.

When most people picture Indian cuisine, they conjure up images of vast meaty curries, piping hot tandoori ovens and endless trays Naans or Rotis. Not to mention a level of spice that’s off the Scoville scale, which is more than most tourists can handle (myself included).

Down south this couldn’t be further from reality, where the baking heat gives way to a gentle sea breeze and lush vegetation. With it comes subtly brilliant flavours and injections of coconut, cardamom, banana and fresh mangoes into every dish. Flavours that make Southern Indian food among the best in the world.

Whether you’re feasting on sustainably caught fish or gorging on the region’s speciality breakfast foods for every meal, Kerala is a food paradise. And a scenic one too. Here’s how to explore South India right, and how to keep your taste buds happy whilst doing so.

You’ll hear a lot of talk about the famous ‘Chinese fishing nets’ in Fort Kochi harbor. Their impressive design and dreamlike slow rhythm against the tide has made them something of a bustling tourist attraction, but for the fishermen and gastronomic tourists alike, it’s the catch of the day that really counts.

Fish sellers will let you take your pick of their bounty, and from there any restaurant in town will prepare it right away. It’s always fun to watch your dinner travel from sea to plate, but an auto-rickshaw driver warned me that the prime catches are always delivered to Fort Kochi’s many restaurants first. You’ll hardly be spoilt for choice with brightly painted signs offering lobsters, mussels and prawns that are caught just a short walk away from their doors.

Fort Kochi has countless options for fine dining, but an authentic home cooked meal is always best. So my pick would be Oceanos, where an unassuming decor leads to a banquet of fish meals, technicolor chutneys and rices served on vivid green banana leaves instead of plates. With a light flavoring of ginger, garlic and a shock of lime, the legendary Kerala fish fry really is hard to beat.

For a more scenic view try the Fort House Restaurant, where you can eat unforgettable ocean produce on a pier that stretches out into the Arabian Sea. If you’re vegetarian, try the hot and sour eggplant curry, usually presented lovingly in a little terracotta pot.

Keeping it seasonal

Like everywhere else in India, the local diet is dramatically controlled by what’s in season. So if you’re a real foodie or have your heart set on picking fresh produce, take this into consideration when planning which month to visit in.

Come in March, April or May and you won’t be able to move for ripe mango overload. That means mango fish curries and succulent raw mangoes that fall apart upon the first bite. In peak season, no meal is complete without a refreshing mango Lassi.

Alternatively, take a trip down in the monsoon time (our summer) and it’s the season for Jackfruit, which has become recognized as something of a superfood in the past few years. A deeply rich source of nutrients, some even claim it has the exact consistency of pulled pork when cooked. It tastes great in tacos too.

Breakfast for dinner

Forget that fatty breakfast of bacon and eggs; down in Kerala it’s more of a wholesome experience. Instead of pancakes, try a Dosa. Similar in consistency to a crepe but often spanning as long as your arm, they can be eaten plain or with a filling such as ‘masala’ (commonly spicy potatoes).

Served with fresh coconut chutney, no Dosa would be complete without Sambar – a delicious lentil and tamarind based broth. You won’t find any maple syrup here.

Another breakfast staple is the perfectly round and impossibly delicate Idli, a light early morning cake that melts effortlessly into your mouth. Also look out for Appam, small pancakes that are a little more manageable than ordering a giant Dosa all for yourself. An Appam and crab masala is to die for.

Over the hotel buffet table, a group of North Indian tourists confided in me that they were eating so called “breakfast foods” for their morning meal, lunch and dinner. Come to Kerala and you’ll soon see why.

The great southern Thali

A complete feast in every sense, the illustrious Thali contains everything at once on a single platter – or traditionally on a banana leaf when eaten in South India. Typically this means every single taste will be catered for, resulting in a sensory hit of sweet, sour, salt, bitterness and dry spice. The science behind a lunchtime Thali is that it will provide complete balance, nutrition and will prevent any cravings. It also tastes amazing.

The very best Thali I’ve ever eaten was at Saravana Bharvan, which you could call a kind of Indian chain restaurant. But in a country where even McDonald’s has a regional spin (honestly try the Maharaja Mac or McPaneer burger), nothing is ever standardized.

Saravana Bharvan is one of the world’s largest vegetarian chains, found predominantly in India but with single offshoot locations in places like New York and London, aimed at India expatriates missing a taste of home. Their menu is considered South Indian cuisine, but varies dramatically depending on where you go. Their Delhi branch regularly has queues spilling out the door, but the best place to sample it is in its spiritual home of South India, or specifically in Chennai in the state of Tamil Nadu. Opt for the Royal Thali, and for the small sum of 150 rupees ($2.24) you will get around eight dishes, rice, a deep fried Pappadom or Puri, chutneys and free refills of Sambar. Heaven.

The purest tea you’ll ever drink

Before your trip it’s worth knowing that Kerala is essentially a dry state, and while you can drink the occasional beer or toddy – a locally brewed coconut wine – it’s best to do it like the locals and lay off the booze.

Thankfully, the state is home to the highest tea-growing region in the world. During my time in Munnar, a small town dedicated to tea picking and processing, I was repeatedly told that the higher the plant, the purer the taste. You can find tea plantations and small factories all along the Western Ghats, where it’s difficult not to be lured in by their sweet, inviting aroma.

Take your pick of the finest black tea, green tea or if you want to try something different, try the cardamom variety for a soft and cleansing flavor.

If Kerala truly is ‘God’s own country’, then tea is surely its amber nectar.

Food is a universal way of understanding a place, a culture, a tradition. Sadly, when one think of South India, the only thing they can think of are the South Indian dishes, dosa and idli . However, there is so much more to the delicious food offered by Southern Indian states. Southern India is mostly comprised of four major states: Karnataka, Kerala, Tamil Nadu and Andhra Pradesh

Coconut, rice, jaggery and Indian spices are the key ingredients in most Keralite dishes. In most traditional food in Kerala, seafood is the hero. Beef fry, beef curry and beef cutlets are very popular and even available at road side dhabas .

Breakfast is mostly appam - made from fermented rice batter and puttu made from steaming hot rice flour and an authentic vegetarian platter includes rice, sambar , avial , pachadi , pickle, chips and payasam , served on a banana leaf. Apart from the food, the local drink, toddy is also a staple in most parts of Kerala. Made from the sap of Palm trees, it is said to give you quite a kick.

Paragon in Kozhikode is one of the most popular joints around. Lunch time here is especially busy and it is quite common for diners to share tables. This is a perfect space for a hearty fill of Kerala or Malabar meal with South Indian dishes like beef ularthiyathu , mutton biryani and kadukka varuval on the menu.

Sree Arul Jyothi Vegetarian Restaurant

Arul Jyothi has been dishing out both south Indian dishes and Kerala specials for years. One of the most famous vegetarian joints in town, it is particularly packed in the evenings. Piping hot coffee and dosas are perfect for an evening snack here.

Anjappar Chettinad Restaurant Nungambakkam

Ajnappar is a global chain, spread out across Tamil Nadu and with presence in Dubai, Singapore and Canada. It is known as the best restaurant to try some authentic Chettinad cuisine. Chicken 65, Mutton Chettinad are the dishes which regarded as the best in Anjappar. The dishes are prepared fresh and served steaming hot.

Murugan Idli Shop

Murugan Idli Shop serves soft, fluffy idlis and a medley of chutneys and powders as accompaniments. Also has kuzhi paniyarams , a cousin of the idli made on a cast-iron pan. They also have a branch in Singapore.

Kozhakattais, dosas and chettinad chicken in the coastal towns of Tamil Nadu

Tamil Nadu is not just vada and filter coffee. They make the essentials of any food while you are in the state, but honestly, Tamil Nadu has more to offer than you can even imagine. From Coimbatore and Chennai to Madurai and Pondicherry, each and every place in Tamil Nadu boasts an exquisite cuisine that is unique to the place.

Chettinad chicken, fish curry, kozhakattais and varieties of dosa are some of the items you'll find on menus across the state. Idli and sambar is one combination that is available on every highway and city in the state and makes for a delicious breakfast or even a road trip snack. Some other favoured snacks are murukku , a fried delicacy made of rice flour and Urad dal powder and sundal , roasted chickpea chat.

Idiyappam is another speciality of the state that is again made with rice flour, threaded into thin noodles and steamed. It can be eaten as a sweet dish with coconut milk or as a savoury dish with mutton/chicken curry. Last but not the least is jigarthanda , a must-try summer drink in Tamil Nadu. A speciality that originated from Madurai, jigarthanda predominantly consists of milk, almond gum, sarsaparilla syrup and sugar.

Tamarind rice, bisi bele bhaath, uppittu and more delicacies of Karnataka

Food in Karnataka is as varied as the different corners of the state. Each region has a special way of preparing food and signature dishes popular through out India. The key ingredients in most of the meals are rice, jowar and ragi.

Udupi in Karnataka is believed to be the birthplace of dosa . Kosambari is a salad that is authentically prepared, with different varieties through out the state. Some typically classic Kannada dishes include Bisi bele bath, Ragi rotti, saaru (rasam), idli - vada sambar, neer dosa, Ragi unda, koli saaru (chicken curry - Kannada style), maamsa saaru (Mutton Curry - Kannada style), and Uppittu (upma - Kannada style).

The very popular and uber delicious Mysore masala dosa also traces its origins back to Mysore in Karnataka. Kesari Bhath and Mysore Pak are among the favourite sweet dishes in Karnataka. And the hilly district of Kodagu is particularly famous for delicious and varied pork dishes, kadumbutt (round balls made up of rice), and spicy meat preparations.

This charming restaurant in Malleshwaram is one place that takes their cuisine seriously. Exclusively catering to those who want to taste authentic Kannada food, you’ll find recipes that came right from agrarian Karnataka. And the delicacies are served in the traditional manner-on a banana leaf, completing the ‘authentic’ experience for you. It will also be a good idea for you to check out occasionally if they are holding an organic food festival- something they are wont to do sometimes.

MTR is one of the most popular restaurants in Bangalore and it is worth a visit. Breakfast here has limited options but the idli served with two types of chutney just melts in your mouth. Other than that, for lunch, you get to taste some traditional curries, the kind of which is rarely prepared with such deftness.

Mahesh Prasad is a place you must go if you a typical South Indian dining experience is what you are after. The decor is simple but the food is uber delicious. Their doors are open all day for breakfast, lunch, dinner, or a nice cup of tea. On this menu, look beyond the usual idlis and dosas and try the khara bhath, vangi bath or pongal .

Andhra Pradesh

Hyderabadi biryani and other delights of Telugu cuisine in Andhra Pradesh and Telangana

The three different regions of these two states make for three very distinct type of cuisines. You can find a variety of seafood in coastal Andhra, whereas in Telangana you will find some amazing millet preparations and ragi is a popular ingredient used in the semi-arid region of the states. Andhra food is one of the richest and spiciest food in India with heavy reliance on red chilli in every dish. Rice is also a major ingredient here, resulting in the world famous Hyderabadi biryani.

Pappu (kind of a lentil), tomato, gongura (a leafy plant), and tamarind are largely used for cooking curries. Ulava charu , a famous soup made from horse gram and bommidala Pulusu , a fish stew is a specialty of coastal Andhra Pradesh. Uggani, masala borugulu (a local snack), ponganaalu (wet rice flour fried in oil), and liberal use of carrot, onions and chillis make for the unique cuisine of the semi-arid regions of the state. Attirasaalu (rice-based vada using jaggery), pakam undalu , (a mixture of steamed rice flour, ground nuts, jaggery), borugu undalu (a sweet variety made corn of jowar and jaggery) and rava laddu are some of the sweet specialities in Andhra.

Bamboo Bay Restaurant

Bamboo Bay in Vishakhapatnam is not only picturesquely located, it also serves some of the best seafood in the state. Here you will find typical Andhra preparations of prawn, fishes and crabs. The idyllic setting, with a beautiful sunset in the background, and the delicious food by the sea make for a wonderful evening in Vishakhapatnam.

Minerva Coffee Shop is a local gem of Hyderabad, popular amongst tourists and locals. The scrumptious and authentic Indian dishes served here are a delight to the taste buds. Bawarchi is often touted as Hyderabad’s finest biryani-serving restaurant. Despite the popularity and the consequent waiting time, the service is exceptional and incredibly swift. Start with some of their delicious Mughlai starters – perhaps the kebabs – and then move on to the biryanis, which are very much worth the wait. Both the chicken and mutton biryanis are well known, and their kheer complements them perfectly as a dessert.

Madurai loves its parottas and the city’s best parotta is easily the one served at Sulthan. Their kothu (minced) parotta turns up the decibel levels to attract customers. Equally delicious is their biryani with tender meat and long thin basmati rice.

1. South Indian Vegetable Biryani Recipe

Ingredients used:

  • Cooking Oil
  • Cinnamon, Cloves, Bay leaf (1 each)
  • Green chillies: 1
  • Tomatoes: 2
  • Vegetables like carrots, beans, potatoes
  • Mint and coriander leaves
  • Salt & Red chilli powder (to taste)
  • Biryani masala powder

Preparation:

Heat a pan. Add oil, cinnamon, bay leaves, cloves. Then add onions and deep fry till it’s brown. Add green chillies, tomatoes and the finely chopped vegetables and mix well.

Add mint leaves. Once all these are fried, add a little curd and mix well. Then add salt to taste. Add red chilli powder and biryani masala. Let it boil. Then add rice to it mix it gently. For each cup of rice, add 2 1/2 cups water.

This South Indian tadka curd rice recipe will teach you how to prepare curd rice, a favourite South Indian rice preparation and a staple in South Indian cuisine.

Ingredients:

  • Boiled rice
  • Fresh curd (yoghurt)
  • Grated carrots (optional)
  • Mustard oil
  • Red or green chillies
  • Curry leaves
  • Ginger juliennes
  • Salt & sugar for taste

Mash the boiled rice, add fresh curd, add grated carrots (optional). In a  little oil, temper ( tadka ) mustard seeds, dry red chillies or green chillies, curry leaves, chana daal, ginger juliennes, and when it’s a little brown, add the tempering to the curd rice. Add salt and sugar as per taste, mix well and it’s ready to eat.

3. Crispy Medu Vada Recipe (South Indian Snack)

Looking for South India lunch box recipes? South Indian snacks like Mehu Vada are perfect for a healthy vegetarian lunch and can be easily packed into a tiffin. This crispy medu vada recipe was contributed by Shaina Verma .

  • 1 cup of white lentils (urad dal)
  • Plenty of water for soaking
  • 1-inch piece of fresh ginger, peeled
  • 1 teaspoon salt
  • ¼ teaspoon baking soda
  • 1 and ½ teaspoon black peppercorns
  • Oil for deep frying

Soak the lentils overnight and drain well, in a colander. This will contain some residual water. Place the lentils with the ginger, salt, baking soda and peppercorns in a food processor.

Process in a blender for about 5 minutes with a few pulses, before turning on the blender continuously for 2 minutes. Remove to a bowl. Heat the oil in a wok for 2 minutes on medium heat.

Take a small amount of the lentil mixture in your palm, insert a small clean hole in the centre and gently lower into the oil. Do this with about 4 pieces, to fill the wok without crowding the wok.

4. South Indian Coconut Milk Pulao Recipe

This South Indian rice recipe was contributed by Seema Gupta and is a great addition to any South Indian meals. Here’s how to prepare South Indian coconut rice pulao.

  • Whole spices
  • Green chillies
  • Ginger-garlic paste
  • Sliced onions
  • Coconut milk
  • Basmati Rice

Heat a pressure cooker with oil on a medium flame, and once it’s hot, add bay leaf, whole spices, cumin, green chillies, curry leaves, and ginger-garlic paste. Saute for 30 seconds until aromatic.

Then add sliced onions and cook until they turn soft and light brown in colour – stir regularly. Add mix vegetables and cook for another 2 to 3 minutes. Add coconut milk, water, washed Basmati Rice, salt and give a stir.

Although it is one of the more elaborate and time-consuming South Indian curry recipes, it’s a great addition to your South Indian curries list and can be had as part of a South Indian dinner menu or lunch menu.

  • 1 cup chana dal
  • ½ tsp fennel
  • 1 tsp cumin
  • 2 tbsp coriander
  • ¼ tsp turmeric
  • ½ tsp chilli powder
  • ½ tsp coriander powder
  • 1 inch cinnamon
  • 1 tsp ginger-garlic paste
  • A pinch of hing (asafoetida)
  • ½ cup coconut milk
  • Few curry leaves
  • Oil for frying

First, in a large bowl, soak 1 cup chana dal for 2 hours. Drain off the water and transfer to a blender. Add ½ tsp fennel, 1 chilli, ½ tsp cumin and blend to a coarse paste without adding any water.

Transfer the chana dal paste to a large mixing bowl. Add 2 tbsp coriander, few curry leaves and ½ tsp salt. Mix well making sure all the spices are well combined.

Wet your hands with water and take a small ball-sized chana dal paste and flatten. Deep fry in hot oil keeping the flame on medium until the chana dal vada turns golden and crisp.

Drain off the vada onto kitchen paper and cool slightly. Break the vada into small pieces and keep aside. In a large kadhai , heat 2 tbsp oil and saute 1 bay leaf, 1-inch cinnamon, 3 cloves, ½ tsp fennel, pinch hing (asafoetida) until it turns aromatic.

Then add 1 onion followed by 1 tsp ginger garlic paste,1 chilli and few curry leaves. Saute well until it changes colour. Keeping the flame on low add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp coriander powder and ½ tsp salt. Saute on low flame until spices turn aromatic.

Then, add 1 tomato and saute until the tomatoes turn soft and mushy. Add 1 cup water and ½ cup coconut milk. Mix well adjusting consistency as required. Cover and boil for 2 minutes or until the flavours are combined well.

6. Besan Karasev Recipe (South Indian Starters)

Karasev is one of the most popular and delicious South Indian starters or Indian snacks and is usually offered as a Diwali snack to guests who visit or before starting a meal. This besan Karasev recipe was contributed by Arathi Raghuveer .

South Indian starters

  • Besan (gram flour): 2 large cups
  • Ghee/oil: 1 large cup
  • Oil: for frying
  • Asafoetida/Hing: 1 teaspoon
  • Salt to taste
  • Red chilli powder: 3-4 tablespoons
  • Ajwain: 1/ 4 teaspoon

Pour the besan into a large bowl and spread it well. Remove the lumps formed. If necessary, sieve it. Then heat the oil or ghee well and pour it onto the besan. Add the remaining items and mix well.

Pour water gradually and make a dough. Make sure the dough is neither very tight nor very runny. Take a portion of the dough and fill into the press which has a plate with small holes.

Heat the oil in a Kadhai and press the besan mixture to form a floral pattern. Fry until golden brown. Remove from the Kadhai and place it on a kitchen towel to remove excess oil.  Fry the remaining dough in the same way and transfer the Karasev into an airtight container.

7. Pesarattu Dosa Recipe (South Indian Breakfast Ideas)

South Indian breakfast ideas

For The Batter:

  • 1 cup moong dal ( hesaru kaal )
  • 2 tbsp chana dal
  • Water as required, to soak
  • 1 tbsp rice flour

Other Ingredients:

  • 7 tsp oil, for roasting 7 dosa
  • Half onion, finely chopped
  • 1-inch ginger, finely chopped
  • 1 green chilli, finely chopped

First, in a large mixing bowl, soak moong dal and chana dal for at least 4 to 8 hours. Then, drain off the water and blend to smooth batter. Add water if required.

Transfer to a large bowl. Add rice flour to get extra crispiness and salt to taste. Mix the batter well and get it to a dosa batter consistency. Add water if required.

Then pour a ladleful of the batter on a hot griddle and spread it in a circular motion to make a thin circle. Also sprinkle some finely chopped onions, jeera, ginger, chilli and oil over the pesarattu .

Press gently, so that the onions stick to the dosa. If the dosa is not cooked on top, flip it and cook both sides. Now mark a triangle over dosa to fold it in the shape of a triangle.

8. Paniyaram Recipe (South Indian Snack)

Paniyaram is a South Indian breakfast dish that you can make with leftover idli batter or enjoy as a tasty South Indian snack too. This Paniyaram recipe was contributed by Sumita .

  • 1/4 cup Urad daal
  • 1 cup of rice
  • 1/4 cup beaten rice
  • A pinch of methi (fenugreek) seeds

Wash and soak the ingredients separately for 8 hours and beaten rice for only 10 minutes before blending all the ingredients to a smooth paste. Mix them all together and set them aside for 8 to 10 hours for fermentation.

Mix some finely chopped onion, chilli, and curry leaves, give it a good mix with the spoon. Grease the paniyaram maker and pour the batter. When one side is done flip it.

Ingredients For Onion Toppings:

  • 2 onion, finely chopped
  • 2 chilli, finely chopped
  • A few curry leaves, finely chopped
  • 2 tbsp coriander, finely chopped

Ingredients For Batter:

  • 3 cup dosa rice (Sona masuri rice)
  • ½ tsp methi (fenugreek) seeds
  • 1 cup urad dal
  • 2 cup puffed rice ( churumuri or murmura ), washed & squeezed
  • 1½ tsp salt
  • Oil for roasting

In a large bowl take 2 onions, 2 chillies, 1-inch ginger, few curry leaves, 2 tbsp coriander and ½ tsp salt. Mix well making sure everything is well combined. Heat the griddle and pour a ladleful of dosa batter.

Spread out in a circular motion slightly thicker than regular masala dosa. Now spread the toppings on top of the uttapam evenly. After the toppings have been added, press gently so the toppings are pressed into the batter.

10. Crispy Cone Dosa Recipe

Who doesn’t love a crispy Indian snack during the monsoons? This crispy cone dosa recipe by Amita Chauhan is a great South Indian snack when you’re stuck at home, whether during the lockdown or monsoons.

  • 2 cups of Idli rice
  • 1/2 cup of urad dal
  • 6 fenugreek seeds

Soak 2 cups of Idli rice, 1/2 cup of urad dal, and 6 fenugreek seeds in separate bowls of water for at least 6 hours. Drain the water and grind them together.

Add some water slowly to form the dosa batter (it should not be too watery). Add salt and mix well. Set aside for 8 to 10 hours. Your batter will be aerated and light.

In a wide-based pan, spread some sesame oil using a tissue. Then using a ladle pour in your dosa batter and in a circular motion, spread it around the pan.

Add 1 tsp of sesame oil in the middle of the batter and swivel the pan. Flip and cook until both sides turn crispy.

14 Dishes You Need to Try in Kerala

Rajasthan's cuisine has evolved to suit the state's harsh dry climate. Dishes are often made to be stored for several days and served without heating. Dairy products are used extensively due to scarcity of water, and liberal dousing of food with ghee (clarified butter) is regarded as a sign of prosperity. Unrefined regional grains such as millet and jowar (sorghum) are common as well.

Popular dishes: You can't visit Rajasthan and not sample d aal-baati-churma . This hearty and iconic dish consists of daal (lentil preparation), baked round baati (bread), and baati crushed and fried in ghee and jaggery. It's also widely consumed in Madhya Pradesh and Uttar Pradesh.

The food in Goa is dominated by seafood (of course, being a coastal state) and pork. The Portuguese influence shows up more obviously at dinner in the evenings, when roast beef may even be served (most Goans are Catholic, and as a result eat beef). Goan food also features elaborate puddings and cakes. Xacutti (coconut-based curry), cafreal (marinated and fried/grilled), sorpotel (stew), recheado (stuffed), ambot tik (sour and spicy), and vindaloo (fiery curry marinated with garlic and vinegar or wine) are common types of dishes. And of course, Goan chourico (sausages) and Goan pao (bread).

Gujarat and West India

Gujarat's cuisine is known for its slight sweet touch (at least a pinch of sugar is added to most dishes!) and is traditionally entirely vegetarian. This makes it a delight for those who don't like to eat meat. Rest assured you don't have to go to Gujarat to get lip-smacking Gujarati food. It's widely available in Mumbai .

Bengal and Odisha

Ladakh, Sikkim, Himachal Pradesh

You'll find a significant Tibetan and Nepali influence in the cuisine of the mountainous areas of northern India, due to migration and proximity to the borders of these countries.

North East India

Encompassing the five states of India - Karnataka, Tamil Nadu Andhra Pradesh, Telangana, and Kerala , you can predominantly find the South Indian cuisine.

•  Andhra Cuisine

Hyderabadi cuisine is definitely the first thing that comes to mind when talking about Andhra cuisine. The Nizams had a strong affiliation for spicy food and thus most of the Andhra cuisine is spicier than any other South Indian food. Apart from the famous Hyderabadi Biryani, Andhra also offers Ullava Chaaru, Chepala Purusu, and a host of other dishes to gorge upon. Travelling to Hyderabad is incomplete without a full plate Biryani. The other places famous for their Biriyanis are Paradise and Hyderabad House. If you have tasted Biriyani in other parts of the country, you will find a stark difference in the taste.

As you move the rest of the states in South India, you will find that Karnataka cuisine perhaps uses the least spices and chilli. Still, you can see the difference in Northern Karnataka. The folks liberally use palm sugar and jaggery in some of the preparations. Also, there is a comparatively more vegetarians than other Southern states. Do not miss trying out the vegetarian south Indian foods like Udupi dosas, bisi bele bath, and rava idlis all of which enjoy immense popularity. Hallimane (home type food), a traditional Karnataka food at North is an absolute try and is a hotter dish than what you find in south Karnataka. If you wish to take back some items home, get doodh peda from Dharwad.While you travel up the state, try benne dosa (butter dosa) in Davengiri.

•  Kerala Cuisine

You can find lots of variety in Kerala food.  Malabari Muslim and Syrian Christian schools of cooking have strong influence on Kerala cuisine. You can find extensive use of coconut in almost all forms of dishes forms of dish prevalent and contributes a certain zing to the taste. The unique amalgamation of the seafood and the coconut oil marks the speciality of the Kerala curries. Aviyal, one of the loved dishes, has coconut and different vegetables. The layered Kerala Parotta is famous for the unique recipe that gives a crisp outer layer and squashy inner layers. It is typically eaten with kurma and not just in Kerala, it is massively popular in all other southern states too. Sadya, which translates to banquet in Malyalam, offers a varied range of dishes served on a banana leaf. Moscow extends a warm welcome to Indian travellers with enhanced infrastructure and hidden gems

Russia actively promoting moscow as a tourist destination for indian travellers, improving infrastructure and visa process..

Russia is making an active bid to attract Indian travellers to visit Moscow -- a huge megalopolis and the historical, political and spiritual heart of the Russian Federation. The Moscow City Tourism Committee is promoting the city not only as a cultural capital but also as a business hub as it plans to onboard trade partners, tourists and vacationers. Moscow has also strengthened cooperation with the tourism sectors of allied nations, hosting familiarization tours for delegates and arranging business trips to showcase the city's tourism potential.

To accommodate visitors, Moscow is improving its infrastructure: signs are now available in English and Chinese, all announcements on public transport are repeated in English, and hotels are also adapting to cater to the needs of guests from various countries and ensure a comfortable stay. "We are still on our way to restore the flow of Indian tourists in Moscow like it used to be before the pandemic," said Bulat Nurmukhanov, Head of International Cooperation Division of Moscow City Tourism Committee.

Bulat further said that before the pandemic, there was a steady growth of 12-15 per cent on a year-on-year basis. In the first half of the year, Moscow received about 20,000 Indians, compared to the same period a year ago, it is about 56 per cent higher. In a bid to make Moscow a must-visit destination, the committee is actively working on improving the infrastructure for international travellers. Moscow is spearheading the development of innovative standards in catering to the needs of foreign travellers.

Tourists arriving in the capital can stay in hotels of various price segments. They can savour traditional Russian cuisine, and can also indulge in a diverse culinary experience, with options ranging from authentic Indian delicacies to continental dishes prepared to the highest standards. In 2022, the number of foreign tourists who visited Moscow increased by 6.3 per cent compared to 2021, reaching a total of 1.7 million.

Travelling to Moscow has now become easier as tourists from India and 54 other countries can apply for an electronic visa to enter Russia from August 1, 2023. The impact of e-visa rollout would be available by October this year after the quarterly data from the Russian border control agencies is analysed, Bulat said.

Moreover, the Russian government is planning to come out with a virtual 'Foreign Tourist Card' that will enable cashless payments for various services. "The idea behind this card is, a person back home in India can remotely apply for this card and then he/she can transfer money from the personal bank account to this bank account," Bulat added.

Meanwhile, sources in the Indian Embassy in Moscow told reporters that the Indian tourism ministry as well as the governments of Goa and Kerala are slated to participate in roundtable discussions this month. There are also plans to engage social media influencers to improve the inward traffic to India. Before the pandemic, around 3 lakh Russian tourists visited India annually. The numbers are down to around 80,000-90,000 of late.

To facilitate easy visitor movement across the city, there is "Discover Moscow" -- a navigation and travel web portal about Moscow and "RUSSPASS travel service" -- a digital platform designed for planning trips across Russia. The Discover Moscow portal features descriptions of over 1,200 architectural landmarks in Moscow. The site provides news, digests with festival and event information and curated lists of exhibition venues.

By availing the RUSSPASS travel service, tourists can access all essential information for a trip to Moscow on the site, including visa and currency matters, accommodation and transportation options in the capital. The site also offers a trip builder feature, allowing tourists to select pre-designed city routes or create their own itinerary from their favourite locations. There are versions of the site in Russian, English, Spanish and Arabic.

On the cultural scene, Moscow boasts 10,000 cultural venues including theaters, museums, libraries, parks, cinemas, concert halls, and more. In the last decade, around 900 parks and green spaces have been renovated.

Craig Vogt’s latest South Jersey restaurant has fit right into the dining scene in Mount Laurel.

Vogt, a Mount Laurel native, couldn’t be happier with the reception that Dolsan Korean BBQ and Sushi has received.

Located at 3747 Church Road in the Princeton Place shopping center, Dolsan is the second in the brand. The other is Dolsat House Korean BBQ Restaurant in Cherry Hill, just miles away from the new restaurant.

“Business is picking up now that word is spreading,” said Vogt, a Lenape High School, who added that the positive reviews have helped, too. “We have 11 tableside barbeque hoods where our servers cook your Korean barbeque meats, and those are sold out on Friday, Saturday and Sunday dinner.”

Reservations are recommended for groups larger than four people.

He says their most popular items are Dolsan kalbi (prime), marinated kalbi, prime ribeye, wagyu chuck flap and wagyu skirt steak.

Customers can choose a grill table or a regular table if they're just getting sushi. The atmosphere is modern and sleek.

“We have brought in a seasoned experienced Korean chef from Manhattan with over 20 plus years of experience in fine dining, Korean and Japanese,” Vogt added. “Our sushi chef also has 25 plus years of experience. We serve Uni and bluefin tuna. Some of the best in the world. Almost 80% of our clients get the barbecue combos which come with a nice variety of meats and food.

“We will expand our Dolsan/Dolsot brand to other parts of New Jersey. We are currently looking at Philly suburbs and Central Jersey.”

Haldi Fine Indian Cuisine, Mount Laurel

The Village at Cambridge Crossing shopping center in Mount Laurel just got a new addition.

A fine dining Indian restaurant has opened at a popular shopping center in Mount Laurel.

Haldi Fine Indian Cuisine had its grand opening on April 19 in a shopping center which also includes Bhan Thai, Pancheros Mexican Grill, La Scala’s Pronto, Ruby Tuesday, LA Fitness, and more.

Haldi says its menu “showcases diverse regional flavors and time-honored cooking techniques” as well as a “delightful fusion of spices, aromas, and textures.”

The Village at Cambridge Crossing is located along Route 38 with proximity to Rowan College at Burlington County and many other businesses.

The restaurant is located at 4180 Dearborn Circle.

Radin’s Delicatessen, Cherry Hill

Owner Russ Cowan is a fourth-generation restaurateur who previously owned Famous 4 th Street Deli in Philadelphia and The Kibbitz Room in Cherry Hill.

Radin’s Delicatessen is located in the Short Hills shopping center at 486 Evesham Road in a space previously occupied by Short Hills Restaurant and Delicatessen, which closed three years ago. The Radin’s name comes from delis previously owned by Cowan’s family years ago in Brooklyn, New York.

Corned beef (they pickle their own) is a specialty as well as pastrami, which they smoke themselves. They also do their own baking.

Hot corned beef, hot roast beef, hot pastrami, fresh roasted turkey, beef salami, smoked ham, are among the overstuffed delicatessen sandwiches offered. Reubens, hot dogs and knish, burgers and cheesesteaks, matzo ball soup, potato pancakes, salads are also on the menu. Ungashtupt sandwiches sport the names of locations in New York, such as the “Franklin Avenue” (corned beef, pastrami, Swiss), “Far Rockaway” (brisket, turkey, Swiss and lettuce) and many more.

Cakes and other desserts are also available at this traditional Jewish deli.

Mexiquila, Somers Point

Its website intro offers “Mexican inspired. Tequila infused.”

Mexiquila, which had its grand opening in February, is closed Wednesday and Sunday and is open Monday, Tuesday and Thursday 4 to 9 p.m. and Friday and Saturday noon to 10 p.m.

The menu has quite a bit to choose from.

Appetizers include chilled pineapple, birria spring roll, nachos, street fries poutine, baked clams, ceviche blanco, steamed mussels or clams and more.

Taco offerings include: grilled squid, jerk chicken, grilled wild mushroom, fish, stewed short rib, pork tenderloin, steak and more. Main dishes include: steak, short rib, jerk chicken kabob, seasonal fish, grilled shrimp. There are also salads, Mexican street bowls, burgers, fried and grilled chicken and other choices.

There are bananas churro, flan, tres leches doughnuts, ice cream, and queso filled empanada (flaky pastry, cheesecake, fresh berries and cinnamon) for dessert.

This popular South Indian cloud kitchen has opened its first dine-in outlet in Chennai and we check it out..

P eople familiar with Kolapasi, the cloud kitchen, know what sort of dishes it offers. The food is simple yet tasty, and the dishes stay true to their South Indian roots. Having expanded its presence overseas, in countries like Australia, and the USA, the brand has gone from strength to strength over the past 11 years.

Bit by the expansion bug, the founders of the cloud kitchen recently opened their first dine-in outlet, named Kolapasi Indian Canteen, in India, and their preferred location to set up shop was none other than Chennai.

Situated close to the famous Tower Park, the Kolapasi Indian Canteen is unassuming. The interior décor is minimalist, and there are inviting phrases about food and foodies on the walls. But one can’t miss the bright sign inside the shop that reads: ‘See-TasteOrder’. The concept is similar to that of an ice cream parlour, Adithya Jothi, co-founder of the brand, tells us.

Guests can sample offerings before making their selection, which we are told will minimise food waste. Then there is ‘Plan Your Portion’, a concept that goes hand-in-hand with See-Taste Order, as diners can choose from dry and wet curries , rice bowls and special combos as per their liking. The dry and wet curries are offered in portions weighing 100g, while the rice bowls and special combos are set items on the menu. We began with the veg biriyani rice bowl and we were suggested that the Chicken chukka will go well with it. The warm biriyani rice had a nice glaze on top and a mild taste, while the spicy chukka was a good combination. The meat was done well, and the aroma of the dish filled the room.

We also got the Prawn chukka and realised that this should have been suggested for the biriyani, as this went well together. The prawns were cooked to perfection and were not bone-dry, very rare in chukka-style dishes.

Then, we opted for the ghee rice with Nilgiri chicken, and since we wanted to try vegetarian dishes too, we got 100g portions of the Brinjal perattal and Paneer tawa fry . The rice was nicely prepared, but the vegetarian sides were disappointing. The paneer was very dry, and the oily Brinjal perattal did not appeal to us. The saving grace was the Nilgiri chicken, which was as good as it gets, so we went for a second serving.

It is at this point that the 100g portion made sense, for we did not waste any of the dishes we were served, and we could see that it allowed diners to try different dishes on offer without the fear of filling up their stomachs really quickly. We also tried a few other dishes, but one offering that stood out was the Slado, a drink that contains only coconut nectar and water. Adithya tells us the drink contains no preservatives. It was very refreshing and had the taste of nectar through and through. It also cooled our bodies down, which is very welcome at this time in Chennai. It is not easy to open a dine-in outlet, especially so when a brand has established itself well as a cloud kitchen. But Kolapasi seems to have pulled it off. Be sure to try their signature dishes and Slado in particular.

Sura Indian Bistro brings a “mosaic” of regional flavors to Center City

It’s out with the Ancient and in with the ‘divine’ at 1726 Chestnut St., with last Tuesday’s opening of Sura Indian Bistro.

The restaurant is the latest endeavor from the team behind Ancient Spirits & Grille, which had occupied the three-story space since 2021. The name Sura comes from Sanskrit for “of the gods.” The overhauled menu, co-owner Syam Namballa told Billy Penn, explores centuries of Indian culinary arts.

“We’ve revived the old, forgotten cuisines from different parts of the subcontinent,” the 41-year-old said, “and tried to make them as authentic as possible.”

The aim, Namballa and general manager Kiran Sodhi explained, is to reflect the diversity of flavors across the country’s regions.

“We’ve had so many cross-cultural influences coming into India,” Sodhi said, listing Dutch, Portuguese, French, British, and Mughal, “to name a few. Everyone who came in left a stamp culturally, foodwise, and there are certain pockets of India which still associate with that culture.” 

One example off Sura’s dinner menu is a Dutch-style tandoori salmon ($26), reduced in red wine and marinated in a spice-infused orange juice over two nights, then grilled and served with a South Indian sauce of tempered mustard leaves, coconut milk, and ginger garlic paste. 

A more recent influence can be found in the British-inspired smoked tikka masalas ($22-$36), and a pair of eggs benny options—with or without chicken tikka ($18, $17)—both served with curried hollandaise spice and home fries, off the brunch menu.

Region-specific flavors are represented throughout. Starters like a chickpea flour Amritsari fish fry ($17), and finely minced Lucknow-style galouti (“soft,” or, more accurately “melt in your mouth”) kebabs ($23) stem from different areas of North India. Elsewhere on the menu, pongal (milk-boiled rice) with mutton roast ($28), and a mamsam iguru goat curry ($26) stand as South Indian specialties. 

True to tradition, the Hyderabadi biryani ($18-$27) is cooked without tomato or red chili and blended with yogurt, while the Malabar Heaven ($26) is a creamy cardamom and coconut milk curry to compliment the seafood flavors of the subcontinent’s southwestern coast.

Available till 2:30 p.m. weekdays, Sura’s lunch specials also offer regional distinctions, with Northern, Southern, and Mughlai-inspired set menus ($18-$23). Once they arrive from India, tiffins—tiered lunch boxes used for workday food deliveries throughout India —will also be used for a build-your-own-tiffin lunch option. 

Royal traditions get a nod too, through Sura’s shikar, or hunting feast. A dinner for two, it includes a soup or salad, naan (butter, garlic, cheese, or green-chile), and a glass of house wine each, accompanying either khargosh (spice-rubbed whole rabbit cooked in a clay tandoor, and quartered over saffron rice and boiled egg, $75), or lamb shank musallam with kheema gravy and rice ($65).

House-made syrups infuse several of the bar’s cocktails ($16-$17)—a ginger syrup for the vodka and elderflower liqueur Endless Summer, a botanical blend for the mezcal and lemon soda Herb of Life, and a chai spice concoction for Sura’s take on an Old Fashioned, the Chai Rye. A dessert cocktail, the Coorg Jamaican Coffee, combines warm brew and coffee liqueur with dark rum and shaved cinnamon, topped with cream.

As with his other establishments—Syam Namballa, along with business partner and high school friend Mahi Reddy, own over 25 multi-cuisine Indian restaurants along the East Coast—Sura’s produce and proteins are all organic and sourced from local farms, with spices shipped from India.

“We want the food to maintain the sanctity and dignity of the ingredients we use,” Namballa said.

Through the shift from Ancient to Sura, the restaurant interior has remained mostly untouched—the same 115 seats across two floors, with a third level divided between two event rooms with a capacity of 32 and 18 (there’s also an elevator). The bigger change has been in the kitchen, with new executive chef Sagar Hajare. Prior to arriving in Philly two weeks ago, Hajare had held the same position at Indian restaurants in Georgia, Texas, and Arkansas, with previous stints in China, Japan, and Singapore following four years of culinary school in India.

“It’s a proud feeling, always, to share something from your country,” the 29-year-old chef told Billy Penn. “And food is the best way to share your culture.”

He’s recently made an addition to the menu with baingan bharta, a grilled eggplant starter popular throughout the subcontinent’s regions, and another key component in a culinary lineup designed to “bring you all the way from Philadelphia to India,” he said. “[And] it’s cheaper than a flight.”

On April 24, 2024, the MICHELIN Guide revealed the brand new list of One, Two, and Three Key hotels in the United States. In this first ever announcement of MICHELIN Keys in the United States, hotels in Atlanta, California, Chicago, Colorado, Florida, New York, and Washington DC were eligible for the distinction. This announcement of the most outstanding hotels in the country comes four years into a comprehensive refresh of our hotel selection. The MICHELIN Guide now includes over 5,000 hotels across the world, and not a single one is simply a room for the night. These are places that significantly add to your experience as a traveler, each vetted and judged excellent in five categories: architecture and interior design, quality and consistency of service, overall personality and character, value for the price, and a significant contribution to the guest experience in a particular setting. Which brings us back to the Keys. The culmination of countless hours of evaluation by our team of experts, the Key hotels below represent the highlights of our broader selection.
