You wouldn't expect to see a CBS News crew at a truck stop in Wyoming, but this isn't your typical truck stop. Tucked in the back of the Akal Travel Center off of Interstate 80 near Laramie, there is an Indian restaurant that's getting national attention.

Akal owner Mintu Pandher was featured on CBS News Sunday Morning this week, discussing his unconventional plan to serve Indian cuisine in the middle of nowhere. When Pandher bought the business in 2014, some customers at the tiny truck stop 22 miles west of Laramie didn't know what they were eating. Often they would order "what I ate last time...I want that meal. I don't know what it was named, but this guy, he gave it to me. I think it's number 29."

"It's bringing the world here rather than keeping our world small," Albany County Sheriff's Deputy Bill Yates told CBS correspondent Jim Axelrod.

As word of mouth spread, Akal became a popular under-the-radar destination for truckers looking for something different along the Interstate. Five years later, Pandher's Indian cuisine is no longer under-the-radar. He recently opened a second truck stop on Interstate 80 in Nebraska and plans to expand in New Mexico next year.

Pandher isn't the only business owner serving international cuisine along I-80 in Wyoming. 96 miles east, the Antelope Truck Stop Pronghorn outside of Burns also has an Indian restaurant which attracts customers from around the region.

INDIAN FOOD CHOICES AND LOCATIONS WHILE TRAVELING

WHAT IS INDIAN ROADSIDE FOOD?

One of the reasons dhabas have gained popularity in the United States is because of their fresh homestyle flavors catering to a particular demography. According to The Sikh Political Action Committee , there are over 150,000 Sikhs in the trucking industry, that’s almost one-fifth of the total number of truckers in America. After spending 12-13 hours on the open road, Sikh drivers seek out spicy, healthy food that reminds them of home.   

A typical menu at a dhaba offers a variety of vegan, vegetarian, and Halal meat dishes, made from scratch daily. You can find staples such as chicken curry, saag paneer (spinach and cottage cheese), chana masala (chickpea stew), daal makhni (curried lentils), baigan bharta (spicy mashed eggplant)—cooked without added creams and coloring. The aromatic sauces are prepared with fresh ingredients, herbs, and spices, as one would at a Punjabi home, and not seasoned down to appeal to western palates. Indian breads such as wholewheat thin round roti , crisp tandoori naan , and paratha (flatbread stuffed with mashed potatoes, onions, and spices), are also popular to take on the road. A glass of probiotic yogurt-based salt and sweet lassi is nourishing during summer trave l . For dessert, there is sweet kheer (cardamom rice pudding) and gajar halva (grated carrots simmered in whole milk).   

WHERE ARE DHABAS LOCATED?

Dhabas in the U.S. are located at gas stations, food trucks, and truck stops with ample parking for semis. Many of the immigrant-run restaurants are not listed online and are known through word of mouth only. Most of these have high traffic, serving as many as 350-400 guests a day, so expect long lines during peak hours.    

A majority of dhabas in the U.S. are located along fabled American Route 66 (or I-40), as well as Interstates 5, 80, and 10. A good way to identify them is by their names, as they usually have the words “Punjabi,” “Tandoor,” “India,” “Akal” or “Bombay” on the storefront. Not sure what happened to this place. I used to regularly drive 30 miles from Laramie because the food was excellent. I returned today and not only was the customer service non existent as usual but the chicken curry I ordered was awful! The chicken... was in a watery tomato sauce and the naan bread was tasteless. The curry uses to be $11.99 but today it was $15! Maybe, they have a new chef and have raised their prices to fund their updates. More

A bit of a disappointment. Drove 40 miles out of our way expecting good indian food, but 30 dollars for an OK lamb curry and a serving of pea paneer with rice, no naan or drinks in a setting kindly described as "no frills" seemed... out of line. No chutney or condiments, was very lame. Nice Mexican cashier, fairly functional bathrooms, helped a bit. Beware gas at $6.00 a gallon when surrounding merchants were charging 4:80 seemed expensive. Did i mention the potholes getting in and out? More

I usually stop here for Diesel for my Pickup truck when passing through. At 1.99 a gallon it is a deal compared to the nearest place which is around .30 cents a gallon higher. However, don't stop for gasoline. I paid 2.98 here on 9/21/2020.... That is more than .70 cents per gallon higher than the next place down the road. The place is a mess. The bathroom is disgusting. Electrical fixtures hanging out of the walls, and it is essentially a dump that needs closed. Pass this place by at all costs. I didn't even see a restaurant. More

Saw this place on the CBS Morning Show. My wife and I have both lived in India and love East Indian Food. So being a little bored we jumped in the RV and drove 1,300 miles to Interstate exit 290 in Wyoming. It was well... worth the drive. A true hole in the wall if it be know. Inside the very unimposing truck stop is a menu board on the wall and a hole in the wall next to it. You order your food there. Each and every dish is cooked to order. We ordered a couple of paneer's that were delicious. They also had REAL chai, not the fake flavored crap you get everywhere else. Black tea with cardamon boiled in milk with sugar. Good stuff. There was some indoor seating but we took it to go and ate in our RV. Other customers there were semi locals who said they drive there every week for the food it is so good. If we ever head toward Laramie again this will be a must stop. More

We stopped here for gas on 9/24/21. The trash bins at the pump islands were overflowing. Even the reservoirs normally used for window washing fluid were stuffed with trash. There was no window washing fluid to be found and no squeegees anywhere. The men's room... was filthy and in serious need of maintenance. One of the two urinals was covered with plastic (apparently out of order) and the other was constantly running water. My wife said the women's room was not much better. I cannot imagine eating food prepared in a place like this. More

A taste of India on the interstate

At a truck stop in Laramie, Wyoming is a you-won't-believe-it situation from the world of trucker cuisine. "If you'd bet me, I would have bet $100 there'd be no decent food of any kind in here," said one customer. And she would've lost that bet.

Just off Exit 290 on I-80, the Indian food that Mintu Pandher and his staff are cooking up in this small kitchen guarantees that.

"This smells like we're in Mumbai, not in Laramie," said correspondent Jim Axelrod.

Just a few feet away from the motor oil, the military hats, and trucker shirts are storage shelves full of fresh turmeric, coriander, and other spices maybe you haven't heard of.

Pandher explained, "This is a leaf, it's called kasuri methi – I mean, if you start putting this on, you will not eat anything without it!"

There's a rice steamer with no off-switch, an always-full pot of chai, and the soul of any Indian kitchen: a clay oven, the tandoor. "The tandoor, the flavor goes in the meat, not out of the meat," said Pandher. "Like, if you put on a grill, everything kind of drips down. This way the heat is all around, it's surrounded by the heat."

When Pandher bought this truck stop in 2014, it came with a griddle for hot dogs and hamburgers.  But figuring truckers could get those up and down I-80, he went with a menu they wouldn't find anywhere else.

Axelrod asked, "Do they ever come in and say, 'All you got's Indian food, and I want meatloaf, I want a hamburger, I want a strip steak'?"

"So then, we tell 'em, 'Hey, try this. You're gonna have that on the next stop anyway,'" Pandher replied. "99 out of 100, they would call again: 'Hey, I want somethin' what I ate last time. That stuff was delicious. I want that meal. I don't know what it was named, but this guy, he gave it to me. I think it's number 29!'"

From cross-country truckers ("I don't know how to rate it." "One to ten?" "I'd say it's probably, you know, a good nine!") to locals, like Sheriff's Deputy Bill Yates  ("If this is the area I'm patrolling, I know where I'm gonna stop to eat lunch"), Pandher's food has been a hit.

Deputy Yates is partial to both the yellow curry and the broader field of vision that comes with it.  "It's bringing the world here rather than keeping our world small," he said.

Strictly speaking, the restaurant accounts for a small part of Pandher's revenue, but that's not how he speaks – or thinks. "I would say 5% to 10% at the most, 10%," he said.

"So, why bother?" Axelrod asked.

"This is not a whole picture with the food. So, they would come in and spend rest $500, $600 on fuel because they know they can get their meal they desire from last 800 miles here."

He's opened another spot in Nebraska, and will soon add a third in New Mexico.  Turns out there's some money in all those smells and tastes, especially with the changing face of trucking, since nearly 19% of long-haul truck drivers in America are now immigrants.

Axelrod asked, "No surprise for you that you can recreate all that stuff in the middle of a truck stop on I-80?"

"Well, that was the plan," Pandher said. "So we succeeded."

All it took was for Mintu Pandher to trust his gut – and those of hungry truckers driving by.

CHICKEN CURRY AT THE TRUCK STOP IN WYOMING

CBS News’ Jim Axelrod reported recently that more than 30,000 Indian-American Sikhs have entered the trucking industry in the last two years. Where the figure comes from isn’t clear, but what’s evident is that many Sikhs are getting behind the wheels of tractor-trailers and giving a boost to an industry facing a record-high shortage of drivers.

Axelrod spoke to Mintu Pandher, who bought a tractor-trailer 13 years ago and now owns nine Peterbilt rigs, as well as a truck stop called Akal Travel Center in Laramie, Wyoming, about two hours from Denver.

“All our trucks are blue and orange,” Pandher told the trucking magazine Overdrive , referring to the team colors of the Denver Broncos. “We’re big fans.”

Catering to the influx of Sikh drivers, Akal Travel Center not only offers Indian food, it also has a small gurudwara where drivers can worship.

A reviewer on Yelp had this to say: “My 3-year-old said she needed to stop and use the potty. … Walked in the store and was immediately hit with the smell of curry. The whole truck stop is family-owned by a very friendly Indian family. The food was delicious and service was awesome. The tandoori oven was down so we got the lamb saag and the mango chicken curry. … Stop by and tell your friends how you ate Indian food at a truck stop in the middle of Wyoming.”

Not sure what happened to this place. I used to regularly drive 30 miles from Laramie because the food was excellent. I returned today and not only was the customer service non existent as usual but the chicken curry I ordered was awful! The chicken... was in a watery tomato sauce and the naan bread was tasteless. The curry uses to be $11.99 but today it was $15! Maybe, they have a new chef and have raised their prices to fund their updates. More

A bit of a disappointment. Drove 40 miles out of our way expecting good indian food, but 30 dollars for an OK lamb curry and a serving of pea paneer with rice, no naan or drinks in a setting kindly described as "no frills" seemed... out of line. No chutney or condiments, was very lame. Nice Mexican cashier, fairly functional bathrooms, helped a bit. Beware gas at $6.00 a gallon when surrounding merchants were charging 4:80 seemed expensive. Did i mention the potholes getting in and out? More

I usually stop here for Diesel for my Pickup truck when passing through. At 1.99 a gallon it is a deal compared to the nearest place which is around .30 cents a gallon higher. However, don't stop for gasoline. I paid 2.98 here on 9/21/2020.... That is more than .70 cents per gallon higher than the next place down the road. The place is a mess. The bathroom is disgusting. Electrical fixtures hanging out of the walls, and it is essentially a dump that needs closed. Pass this place by at all costs. I didn't even see a restaurant. More

Saw this place on the CBS Morning Show. My wife and I have both lived in India and love East Indian Food. So being a little bored we jumped in the RV and drove 1,300 miles to Interstate exit 290 in Wyoming. It was well... worth the drive. A true hole in the wall if it be know. Inside the very unimposing truck stop is a menu board on the wall and a hole in the wall next to it. You order your food there. Each and every dish is cooked to order. We ordered a couple of paneer's that were delicious. They also had REAL chai, not the fake flavored crap you get everywhere else. Black tea with cardamon boiled in milk with sugar. Good stuff. There was some indoor seating but we took it to go and ate in our RV. Other customers there were semi locals who said they drive there every week for the food it is so good. If we ever head toward Laramie again this will be a must stop. More

We stopped here for gas on 9/24/21. The trash bins at the pump islands were overflowing. Even the reservoirs normally used for window washing fluid were stuffed with trash. There was no window washing fluid to be found and no squeegees anywhere. The men's room... was filthy and in serious need of maintenance. One of the two urinals was covered with plastic (apparently out of order) and the other was constantly running water. My wife said the women's room was not much better. I cannot imagine eating food prepared in a place like this. More
