Shoot in Color Instead of Black and White

Color is more than just a pretty face. It’s also your best friend when it comes to travel photography, helping you capture the vibrancy of your surroundings and giving your vacation pictures a time frame as technology advances.

When you shoot in color, you have the ability to capture every detail and texture of a scene. You don’t have to worry about getting the perfect exposure or how the image will look on paper – you can just focus on capturing what you have in front of you and worry about the rest later.

Black and white photography, on the other hand, requires you to think about what makes an image work, because there’s no color to cover imperfections or distract from flaws in composition or subject matter. Rather than focusing on getting everything right in every shot, black-and-white photography requires you to analyze every element in the image to ensure that everything fits together seamlessly for maximum impact – whether it’s making sure that each subject is sufficiently separated from the others, or ensuring that there is enough contrast between light sources and shadows within a scene so that there are no unwanted distractions from what should be the focus of the image.

What makes black and white photos special is that black and white photos are timeless, while color photos can quickly look dated as technology advances. Some photographers even choose to convert their images to black and white after the fact, believing that it gives them more creative freedom than shooting in color.

Color is vibrant and eye-catching, but black and white can be just as impressive – if not more so – than its counterpart.

When Possible, Use Natural Light

When traveling and taking photos, it’s easy to get into the habit of shooting only when the sun is shining. But if you have the time, you should shoot with natural light as much as possible.

Setting up an online gallery is the easiest way to show off your travel pictures. There are many services on the Internet, including Flickr and SmugMug. You can also use your website or blog to showcase your photos.

The purpose of an online gallery is to share your best shots with friends and family, as well as potential clients and employers. If you’re serious about becoming a professional photographer, it’s a good idea to create such a gallery, even if you don’t plan to charge money to view photos.

Use Social Media

For example, if you’ve been to Australia several times and know the best places to go, why not share some tips about those places on your blog? You might even want to share some stories about your experiences there!

Another reason blogging can be beneficial is the opportunity to connect with people who have traveled to similar places. This is especially important if you want to connect with like-minded people from around the world with similar interests.

Intrepid and visionary, photographers have long ventured forth to document their journeys and capture the essence of the places they explore. In celebration of our 2023 Travel Photography Award , (open for entries until the end of August) we’ve curated a list of 20 photographers, past and present, whose inspiring images embody the unique allure of travel.

1. Steve McCurry

Steve McCurry , the esteemed judge of our current Travel Award , is a globally-renowned figure in the world of photography. His remarkable oeuvre encompasses some of the most iconic images of our time and showcases the awe-inspiring beauty and cultural diversity of our planet.

Born in Philadelphia in 1950, McCurry studied cinematography at Pennsylvania State University, after which he worked as a staff photographer for the local newspaper Today’s Post . However, driven by his passion for travel and photography, he embarked on a journey to India, a country that would become synonymous with his name due to the stunning images he captured throughout his career. It was this inaugural trip that sparked the epiphanic realization, “if you wait, people will forget your camera and the soul will drift up into view”, setting the foundation for a remarkable career and some truly captivating images encompassing every corner of the globe.

2. Inge Morath

One of the most influential photographers in the history of the medium, Inge Morath travelled extensively throughout her career, forming close relationships with the places she visited through her absolute immersion in the local culture. The remarkable images she captured, display her wonderful artistry and serve as fascinating mementos of their time, whilst demonstrating the profound potential of color photography long before it gained widespread acceptance.

3. Michael Yamashita

Few photographers convey the sheer joy of travel like Michael Yamashita . Over the past three decades, he has embarked on a journey around the world, capturing breathtaking images of its landscapes and people.

Though, throughout his career, Yamashita has photographed on six different continents, it is his work in Asia that has become particularly renowned. With an Asian Studies major from Wesleyan University and Japanese heritage, Yamashita has become an expert in the region and has photographed extensively in China, Japan, Southeast Asia, and India, capturing images that articulately convey the cultural diversity and stunning beauty of this fascinating continent.

4. Denis Dailleux

Though he has photographed various locations, Denis Dailleux is inseparably linked to Egypt , a country with which he has had a long and complex love affair, that has engendered some truly stunning imagery. His images convey a deep understanding of the Egyptian people and their culture, capturing their humanity and resilience.

He first visited the country in 1992, to join his Egyptian lover whom he had met in Paris a year earlier, and immediately fell in love with the country, captivated by its beguiling beauty and the warmth and generosity of its people.

He spent the next three decades visiting the country (before eventually, living there for several years), capturing its unique essence with love, tenderness, profound respect, and a masterful eye for form, light, and color.

5. Martine Franck

One of the finest practitioners of her time, and, like her husband Henri Cartier-Bresson, a major proponent of the humanist style, Martine Franck spent much of her life traversing the globe, capturing utterly compelling depictions of everyday life with remarkable grace and artistry. Her subjects and locations were as diverse as Tibetan temples, and industrial Northern English towns, whilst she also photographed her homeland extensively, notably in 1976, when she and four female compatriots, were commissioned by La Fondation Nationale de la Photographie to document their countrymen and women on vacation, during which she captured her now iconic photograph ‘Swimming Pool Designed by Alain Capeilleres, La Brusc’.

6. Alex Webb

“Most of my projects seem to start as exploratory journeys with no visible end in sight.” — Alex Webb

Renowned photojournalist, and judge of our 2020 Street Photography Award (alongside his wife and fellow photographer Rebecca Norris-Webb) Alex Webb is a master of capturing the decisive moment, rendering images filled with energy and movement that communicate brilliantly the atmosphere of the scene.⁠ ⁠ While he has photographed extensively in his homeland, Webb is best known for his vibrant and dynamic work in Latin America and the Caribbean. His images capture the region’s unique atmosphere, rich colors, and intricate details, offering a captivating glimpse into this part of the world.⁠

7. Maggie Steber

One of the finest photographers of her generation, Maggie Steber has dedicated her life to documenting some of the most important stories of our time, a mission that has taken her to some 70 countries, and encompassed everything from the African slave trade to natural disasters. Forthright and rooted in compassion, her images, which have graced the pages of many of the world’s most important publications including, National Geographic, The New York Times Magazine, and The Guardian, cut to the heart of the human condition, leaving a lasting impact on viewers worldwide.

8. Frédéric Lagrange

Frédéric Lagrange is a French-born photographer whose breathtaking imagery showcases the dramatic beauty and cultural diversity of our world. Over the last decade and a half, he has traveled extensively, visiting approximately 100 countries across almost every continent, focusing particularly on secluded shores and remote areas, such as the wild and rugged Wakhan Corridor in northeastern Afghanistan. His stunning images, which have been published in The New York Times Magazine, Vanity Fair, Harper’s Bazaar, Vogue, and The New Yorker (among others) evoke a sense of intrepidity and solidify his position as one of today’s most talented travel photographers.

9. Sebastião Salgado

One of the medium’s most masterful living practitioners, Brazilian photojournalist Sebastião Salgado is renowned for his powerful monochromatic images that tell the human stories behind some of the most important issues of our age.

During the course of his near-five decade-long career, he has traversed the globe, capturing extraordinary images, though it is perhaps his depictions of his homeland for which he is best known. In 1986, he travelled to the notorious Serra Pelada gold mine, to photograph some of the 50,000 workers who worked in terrible conditions. His most recent project, the landmark, Amazonia a series of stunning images of the landscapes and people of the world’s largest rainforest captured during a series of trips over the course of six years, is one of his most impressive, communicating the dramatic beauty, incredible biodiversity, and rich cultural heterogeneity of what the photographer calls “paradise on earth”, and thus highlighting the importance of its conservation at what is a crucial tipping point in the fight against climate change.

10. Pia Riverola

One of the best-known travel photographs of recent years, Pia Riverola , is renowned for her dreamy, pastel-hued renderings, which flawlessly capture the very essence of their subject matter.

Whether it’s vibrant flower markets in Mexico City, neon-lit and rain-drenched streets in Tokyo , or the lush landscapes of South American jungles, Riverola ‘s photographs exude a nostalgic and dream-like quality, displaying her masterful understanding of light and inducing a powerful sense of wanderlust.

11. Bruno Barbey

One of the finest photographers of our time, Moroccan-born, French photographer Bruno Barbey, has spent the last five decades travelling the world capturing powerful images that display his unique artistic voice and intrepidity. Over the years he has photographed in Brazil, China, India, his homeland France, and Morrocco, his birthplace, returning on numerous occasions to capture stunning, color-rich images that convey the unique essence of the country.

12. Jimmy Nelson

Judge of our recent Portrait Award , Jimmy Nelson, has dedicated the last ten years to documenting indigenous cultures around the world, which face increasing threats to their traditions and ways of life.

Nelson ‘s adventurous spirit was ignited during his childhood through his father’s work as an exploratory geologist. His first major project involved an epic journey on foot across Tibet in 1987, while seven years later, he documented the newly-opened People’s Republic of China in his acclaimed project “Literary Portraits of China,” which was exhibited in Tiananmen Square before touring globally.

However, it was his subsequent travels around the world to photograph remote cultures using a traditional 50-year-old plate camera, that laid the foundation for the project for which he is best known. “Before They Pass Away”, comprises stunning portraits of 35 different indigenous communities across the globe, capturing their unique traditions and practices in the face of globalization and industrialization.

13. Jim Richardson

Though born in the US, Richardson is immensely proud of his Celtic roots and has spent much of his career focusing on Ireland and Scotland. The latter has been a particularly prominent subject, his fascination with the wild landscapes of the Scottish highlands and the remote islands off its western coastline, engendering a wealth of captivating landscape images that articulate its unique, rugged beauty.

14. Matthieu Paley

French-born Matthieu Paley is one of the finest contemporary travel photographers, whose practice focuses on remote areas, and those communities that call them home.

Working on assignments for National Geographic and other leading publications, he has captured profoundly fascinating photo essays on hunter-gatherers in Tanzania, Greenland’s Inuit and Afghanistan’s Kyrgyz nomads (which he did over the course of a decade), leading to a number of notable awards, including a 2017 World Press Photo award for his portrayal of a Uighur woman in western China.

15. Brooke Holm

The 2nd Prize Winner of our 2018 Color Award for her breathtaking depiction of an Icelandic landscape, Australian-American artist Brooke Holm is one of the most exciting emerging proponents of travel photography. Inspired by satellite imagery and therefore, captured almost invariably from above, her depictions of some of the world’s most beautiful natural scenery are akin to paintings. Rich in color, texture and form, they offer a divergence from conventional viewpoints, showing the natural world at scale, in an attempt to subvert traditional anthropocentric narratives and advocate for coexistence with our environment and its inhabitants.

16. Galen Rowell

Equal parts adventurer and photographer, Galen Rowell spent the majority of his extraordinary life traversing some of the world’s most lofty areas, and capturing stunning landscape images that convey the beauty of the subject.

Throughout his career, Rowell undertook assignments for prestigious publications like LIFE and National Geographic, fearlessly venturing into remote and unforgiving locations, capturing them with unmatched artistry that still resonates today. His work not only showcased the natural wonders of these landscapes but also left a profound impact on the field of photography, inspiring generations of landscape photographers and ensuring his legacy lives on through his work.

17. Ami Vitale

Considered one of the most important conservation photographers of her generation, Ami Vitale has spent her career travelling the globe, traversing more than 100 countries and capturing stunning images that illuminates the often-overlooked heroes and communities whose efforts to protect wildlife and the natural world are truly inspiring. A Nikon Ambassador and regular contributor to National Geographic, Vitale has received numerous awards and commendations over the years, among them a Lucie Humanitarian Award and numerous World Press Photo prizes, which stand as a testament to her dedication and talent in her field. 

18. Jody MacDonald

Few can rival Jody MacDonald when it comes to intrepidity. The award-winning adventurer and photographer has visited over 100 countries and spent a decade travelling the globe on a 60-foot catamaran, on an expedition to uncover the most remote and untamed corners of the planet. Working on assignment for National Geographic and other leading publications, or commercial projects for the likes of Patagonia and Red Bull, MacDonald has photographed some of the harshest and most difficult-to-reach corners of the earth – from the Sahara to the Himalayas – capturing stunning images that communicate the wild beauty of our world.

19. Evelyn Hofer

Few, if any photographers in history captured the essence of cites in the manner of Evelyn Hofer , the enigmatic German-born photographer who, throughout her impressive career, travelled the world photographing its landscapes and people with rarely-matched grace and artistry.

Whether it was Dublin, Paris, Florence, or the cities of her adopted homeland, the United States, Hofer’s photographs capture the essence of the subject. Underpinned by a masterful understanding of form, light, and color, today they stand as timeless testaments to her artistic vision and her ability to reveal the profound beauty that exists within the tapestry of our world.

Man arrested for boarding flight with someone else's ticket: How he reportedly did it

The FBI is investigating an incident where a man allegedly took a picture of someone else’s boarding pass to illegally board a Delta Air Lines flight on Sunday, according to a criminal complaint filed in the United States District Court for the District of Utah.

According to the complaint, officers removed the passenger – identified as Wicliff Yves Fleurizard of George, Texas – from Flight 1683, departing Salt Lake City for Austin, Texas. 

Fleurizard was arrested on one felony count of stowing away on a vessel or aircraft and faces a fine or no more than a five-year sentence, or both.

The complaint said surveillance footage of the boarding area showed Fleurizard taking photos of multiple passengers' phones “while they were not looking.” A Delta gate agent who was interviewed said a minor female passenger traveling alone had an issue when she tried to scan her ticket – the system showed she was already on board. 

When the aircraft was preparing to take off, Fleurizard spent “a significant amount of time in the lavatory” in the front of the aircraft before moving to the back lavatory.

During taxiing, a flight attendant noticed “there were no available seats” left, so she approached Fleurizard to help. He told her his seat was 21F, but the flight attendant verified the seat wasn’t under Fleurizard’s name. 

The flight crew looked up Fleurizard’s real name and were unable to locate a valid ticket or reservation for him under the Guest Service Tool. Since Fleurizard was not authorized to be on board, the plane returned to the gate, and he was escorted off the flight. 

Fleurizard told officers he was in Utah for a snowboarding trip and “needed to get home to see his family who had flown in from Florida,” according to the complaint, adding that he tried to use his friend’s Southwest Airlines buddy pass on Saturday but all the flights were booked. He used the Southwest flight to get through security. 

“Fleurizard admitted he made a mistake and was only trying to get home,” the complaint said. 

Delta said it is “cooperating with law enforcement and relevant federal agencies regarding an investigation.”

The flight landed in Austin 30 minutes later than its scheduled arrival time. Fleurizard is held on a federal detainer at Salt Lake County Metro Jail . 

Last month, a woman reportedly boarded an American Airlines flight from Nashville, Tennessee, to Los Angeles without a boarding pass by passing through an unmanned section of security. She was met with law enforcement upon arrival.

Man sneaked photos of boarding passes to get on Delta plane, complaint says

A Texas man is accused of photographing other passengers’ boarding passes to sneak onto a Delta Air Lines flight from Salt Lake City on Sunday, leading to his arrest on a felony charge after flight attendants recognized suspicious circumstances before takeoff.

Wicliff Yves Fleurizard, 26, of George, Tex., managed to board a flight to Austin using a photo of a female minor’s boarding pass that he secretly took when she was not looking, according to a criminal complaint filed at the U.S. District Court of Utah.

Surveillance footage from Salt Lake City International Airport showed Fleurizard taking photos of multiple passengers’ phones or mobile boarding passes near the flight’s gate, the complaint states. When a female minor attempted to board, a Delta gate agent discovered that the system showed she was already on the plane. She had been traveling alone using a ticket purchased by her father, according to the court filing.

Once on the plane, Fleurizard’s behavior before takeoff caught the attention of flight attendants. He attempted to open the emergency equipment storage door, leading one staff member to guide him to the lavatory at the front of the aircraft. Then he “spent a significant amount of time” in the bathroom while others boarded, and switched to the lavatory at the back of the plane after all passengers had entered the plane and the doors were secured, the complaint states.

As the plane began to taxi to the runway, Fleurizard indicated his seat to a flight attendant, but it was already occupied. Flight staff looked up his name in their Guest Service Tool system but were unable to find any Delta reservation matching his name.

The plane returned to the gate, where Salt Lake City police officers met with Fleurizard. He told law enforcement officers that he had been on a snowboarding trip to Park City, Utah, and that he had tried to get home using a Southwest Airlines “buddy pass” that a friend had given him, according to the court filing.

Fleurizard told police officers that he had tried to board two Southwest flights on Saturday afternoon and Sunday morning using his ticket, but both were overbooked and could not provide him a seat. The airline reassigned him for the third time to a flight at 3 p.m. Sunday, but Fleurizard left the Southwest boarding area, the complaint states.

Fleurizard then attempted to take the Delta Air Lines flight, which was scheduled to take off hours earlier than the Southwest ticket, at 9:50 a.m., according to FlightAware .

“Fleurizard admitted he had made a mistake and was only trying to get home,” the court filing states. He now has one count of a felony charge for being a stowaway on an aircraft.

A lawyer for Fleurizard was not listed in public court documents as of Wednesday evening.

Delta Air Lines, the Transportation Security Administration, Salt Lake City International Airport and the Salt Lake City Police Department did not immediately respond to a request for comment.

In addition, Kate's admission that she occasionally experiments with editing led many news agencies, including CNN and Getty Images, to go back through other pictures released by the Palace. Here, all the images that have been called into question.

The editing issues flagged include the disappearance of Princess Charlotte's sleeve, the artificial pattern of the young princess's hair, Kate's zipper being misaligned, Prince Louis's sweater pattern repeating oddly, and more.

Per the New York Times , " Samora Bennett-Gager, an expert in photo retouching, identified multiple signs of image manipulation. The edges of Charlotte’s legs, he said, were unnaturally soft, suggesting that the background around them had been shifted. Catherine’s hand on the waist of her youngest son, Louis, is blurry, which he said could indicate that the image was taken from a separate frame of the shoot."

A photo shared by the Prince and Princess of Wales on what would've been Queen Elizabeth's 97th birthday shows the late monarch with some of her great-grandchildren and two of her grandchildren at Balmoral. The photo was taken by Kate, and following the reassessment of Palace handout images, an editor's note in Getty reads "Image has been digitally enhanced at source." Edits of the photo include changes to the sofa upholstery, a repeated curl pattern on Mia Tindall 's hair, a weird cutout around Prince Louis, and more. (See an investigation into the edits, here .)

A Getty spokesperson said, "Getty Images is undertaking a review of handout images and in accordance with its editorial policy is placing an editor's note on images where the source has suggested they could be digitally enhanced."

The Wales Family Christmas Card 2023

While no official statements from photo agencies have been made regarding Kate and William's 2023 Christmas Card , many online have pointed out possible evidence of editing.

Following the Kate photo drama, allegations arose that the Duke and Duchess of Sussex released edited photos: Specifically, Archie's christening portrait , taken by Chris Allerton in 2019, and their second pregnancy announcement portrait , taken by Misan Harriman in 2021. Both photographers vehemently denied the allegations of editing, and they were soon retracted.

Of the christening portrait, Allerton said , "I would like to state very clearly and thus clarify matters that the photograph you are referring to, taken by me at Windsor Castle on July 6, 2019, has not been manipulated and was distributed to the best of my knowledge in adherence with the submission guidelines required by Getty Images, via the Palace press office." He added, "It would be utterly false and indeed defamatory to suggest that I had somehow changed or materially manipulated any of the subjects or content of the image."

Of the pregnancy announcement, Harriman said the accusations were "insidious and really dangerous journalism." He soon released the original, color portrait of the Duke and Duchess of Sussex.

Police say he got on a plane using a photo of a girl’s boarding pass. Now he faces a felony charge

A Texas man is accused of trying to sneak on board a flight by taking a photo of another passenger’s boarding pass, and authorities say he was caught because the flight was full and he didn’t have a place to sit.

Now the man faces a felony charge of being a stowaway on an aircraft.

Wicliff Yves Fleurizard of George, Texas, was arrested Sunday after boarding a Delta Air Lines plane in Salt Lake City for a flight to Austin, Texas, federal prosecutors in Utah said.

According to a police officer’s affidavit filed in federal district court, Fleurizard boarded the plane and opened the door to a storage space for emergency equipment. A flight attendant helped him get to the lavatory in the front of the plane.

After everyone else boarded, Fleurizard moved to a lavatory in the back of the plane. When he exited — at this point, the plane had started to taxi to the runway — he told a flight attendant that he was in seat 21F.

There was already somebody in seat 21F, a girl traveling alone, and the flight attendant confirmed that she was a ticketed passenger.

When the crew searched, Fleurizard’s name didn’t pop up in records for the Austin-bound flight “or any other Delta Flight for that matter,” according to the affidavit.

The plane returned to the gate, where officers were waiting.

According to the complaint, a review of surveillance footage from the boarding area showed Fleurizard taking pictures of several passengers’ phones and boarding passes when they weren’t looking, then using his phone as a boarding pass to get on the plane.

It turned out that a friend gave Fleurizard a buddy pass to fly on Southwest Airlines, but two previous flights were full and he was re-booked on a flight later Sunday, according to the police officer.

No attorney was listed for the man.

The story behind Chicago deep dish pizza

This thick, cheese-laden take on the Italian original has become a culinary icon — but who exactly invented it?

Deep dish pizza is synonymous with Chicago. A thick, bread-like base topped with layers of mozzarella and chunky tomato sauce is the perfect fortification, some might argue, against the notoriously long and cold Chicago winters.  

Not everyone appreciates it, however. “Chicago pizza is not only not better than New York pizza, it’s not pizza. It’s a fucking casserole ,” comedian (and New Yorker) Jon Stewart once ranted on his TV programme, The Daily Show . And it’s true that for those used to a thin New York-style slice, or even more delicate Neapolitan pizzas, deep dish can seem a little… excessive. But who can resist the lure of so much melted cheese? Even Stewart saw the error of his ways and publicly repented.

According to the legend perpetuated by Pizzeria Uno , Ike Sewell, the original owner of Uno, invented deep dish pizza back in 1943. But this isn’t quite true, argues pizza historian Peter Regas , who’s been investigating the roots of deep dish for more than a decade. True deep dish was indeed invented at 29 East Ohio Street (the address of Pizzeria Uno’s first restaurant) in the autumn of 1943, says Regas — but not by Sewell. The actual mastermind was apparently Ric Riccardo, who discovered a pizza oven and round cast iron pans in the kitchen when he took over the place.

Riccardo named his restaurant Pizzeria Riccardo — but did he actually make the pizza? Possibly, but he was a businessman and an artist, not a cook. He’d also grown up in northern Italy, and pizza — at that time still a rarity in Chicago — was a southern Italian dish, the thin crust version originating in Naples and rustico, a hand pie stuffed with fillings including mozzarella and tomato, being a popular street food in Salento. Some sources credit Pizzeria Uno’s manager, Rudy Malnati Sr, or his son Lou, a bartender, with the deep dish’s invention, but Regas has found evidence that Malnati didn’t join the restaurant until a few years later. Meanwhile, Sewell, a Texan and a liquor distributor by trade, didn’t partner with Riccardo until early 1944, and his main contribution to the operation was money.

The first deep dish pizza, according to Regas, was about an inch tall — half the height of the modern product — and whoever was in Riccardo’s kitchen used standard pizza dough, made with flour, yeast, salt and water. The current fortified dough appeared in the 1950s courtesy of Alice Mae Redmond, a cook from Mississippi who thought the original wasn’t stretchy enough and incorporated elements from her recipe for Southern-style biscuits — namely oil.

Riccardo died in 1954 and Redmond and the Malnatis moved on to rival pizzerias, Gino’s East and Lou Malnati’s. Sewell, by this point the sole owner, changed the name to Pizzeria Uno. In 1977, he sold up to a Boston conglomerate, which simplified the origin story to give him all the credit. “[The CEO] told me, ‘Ike Sewell is our Colonel Sanders’,” Regas says, referring to the KFC figurehead. “The idea that they are the original is the most important thing.”

How it’s made

Crust recipes, topping selections and sauce seasonings vary from pizzeria to pizzeria, but all deep dish pizzas begin with a cast iron pan lined with a yeasty dough fortified with either olive oil or butter. It’s then filled with heaps of mozzarella cheese, covered with toppings and finished off with a layer of tomato sauce. Although the original Uno’s pizza was just cheese and tomato, one of the most dominant toppings in Chicago today is sausage.

Several variations have appeared over the years. Stuffed pizza, served at Nancy’s and Giordano’s, has a second layer of crust above the cheese. A variant known as pan pizza, invented at Pequod’s, has an extra sprinkling of cheese between the crust and the side of the pan, which caramelises during baking.

Several chains, including Uno’s and Lou Malnati’s, sell frozen pizzas in grocery stores and by mail order. The first recipe for home cooks appeared as early as 1945, according to Chicago Tribune archives, but most Chicagoans still prefer to get theirs from a pizzeria.

Where to try it

1.   lou malnati’s.

Founded in 1971, Lou Malnati’s is the largest of the deep dish chains, with around 80 locations across the city, Illinois, Wisconsin, Indiana and Arizona, home to many expat Chicagoans. It’s famous for its flaky, buttery crust and enormous sausage patty topping; gluten-free offerings include a crustless pizza held together with yet more sausage.

2.   Pequod’s

Pequod’s caramelised cheese crust, invented by its founder, Burt Katz, has a cult following among Chicago pizza connoisseurs. If you go at the weekend, be prepared to wait for a table, but very few visitors would argue it’s not worth it. The $7.95 (£6) individual pizza lunch special is one of the best deals in town.

3.   Milly’s Pizza in the Pan

Newcomer Milly’s began as founder Robert Maleski’s pandemic project. He made just 20 pizzas a night and always sold out: Chicagoans loved his caramelised cheese crust and surprising topping combinations such as cherry tomatoes, jalapeños, bacon and pineapple. In 2021, he moved into a permanent space in the Uptown neighborhood, where his pizzas remain a hot item; it’s best to order in advance. A second location is scheduled to open this year.
